WELLNESS WEDNESDAY: Watermelon Feta Mint Salad Recipe

Hey Chicks,

Hope you are having a fab week and managing to stay cool! After finishing filming of our upcoming TV series “Shape Up with FIT CHICKS” on Rogers TV (I can’t believe we filmed 24 episodes in 5 weeks!), I headed to Las Vegas for a short snapper weekend and while reading a food magazine on the plane, I got reintroduced to one of my fave bbq side salads – Watermelon Feta Mint Salad!

It is one of those dishes that is super refreshing, healthy, easy to make but makes you look like a real food connoisseur (I am all about looking fancy on a budget…clothing wise and food:)

Here is my fave recipe for this super salad that I have to give full credit to the lovely Paula Deen from the Food Network for with a couple small changes to suit my tastes.  I swap the red wine vinegar for aged balsamic and the sweet onion for red onion. Alot of her dishes are not too healthy as she is a Southern Lady but this one is a fave and is great with fish:

CHICK FEED: WATERMELON FETA MINT SALAD

Ingredients

1 (5-pound) watermelon
1 Vidalia or other sweet onion (I like red onions and it looks pretty!)
1/4 cup red wine vinegar (I actually prefer an aged balsamic in this but red wine works too!)
Salt and pepper
1/2 cup extra-virgin olive oil
2 tablespoons chopped fresh mint
4 ounces feta cheese, crumbled
6 whole mint sprigs

Directions

Cut the flesh from the melon and cut into bite size pieces, removing and discarding the seeds, and set aside. Peel and slice the onion into rings.

In a small bowl, combine the vinegar, salt, pepper, and whisk until salt is dissolved. Slowly whisk in the olive oil, a few drops at a time. Add in the chopped mint, taste, and adjust seasonings.

In a large bowl, combine the melon, onion, and feta. Pour the dressing over the melon mixture and toss gently until everything is coated and evenly mixed. Garnish with mint sprigs.

To serve, divide salad among individual plates and garnish with mint leaves.
