Hey Chicks,

This is an awesomely easy brekkie if you can’t have gluten, or are watching your processed carbs. It gives that yummy oatmealy taste without the oats! It’s also high in protein and contains lots of good fats…Enjoy!

Ingredients

  • 1/4 cup almonds
  • 1/2 cup egg whites
  • 1 tsp vanilla
  • sprinkle of cinnamon
  • 1/4 ripe banana (for sweetness)
  • 1 tsp coconut oil

Directions

  • Melt coconut oil in a pan. Meanwhile, put all of the other ingredients in a blender and whiz a couple of times til the almonds are broken up but not completely disinegrated!
  • Pour into the pan and cook as you would scrambled eggs. Pour into a bowl and top with fresh fruit if desired.

You can easily experiment with this recipe using different fruit, nuts, nut butters and flax seeds too!
