Easy Healthy Frozen Treats

I’m so happy summer is finally here – so are my girls cuz they can wear their fave dresses and bathing suits all day! Summer to me is always associated with ice cream and popsicles! Yum!

Last week my Mom bought a box of “healthy” blue box popsicles over for the girls. I immediately looked at the “healthy” ingredients:

Water, fruit base [strawberry purée, banana purée, water, concentrated apple juice, sugar, glucose, concentrated lemon juice, colouring (concentrated beet juice, annatto extract), natural flavour], sugar, maltodextrin, carob bean gum, guar gum, carrageenan. may contain peanuts, tree nuts and milk.

Gross. They may be fat-free and have 80 calories – but it’s pure sugar and a bunch of other crap. I can do better….and cheaper!

For 5 bucks I got some popsicle molds, and with a little imagination and ten minutes, you can whip up a healthy summer snack. They are also a great way to use up fruit that would otherwise end up moldy or in the garbage.

This is the combo we made this morning. Makes 6 popsicles (ended up with a little extra mix, but we didn’t mind sampling!)

Coconut Banana Peach Pops

 

  • 3 bananas (I freeze my brown bananas to use in things like this, or I buy the discount ones!)
  • 2 peaches
  • 1/2 cup coconut milk (You don’t have to add this, but it adds awesome healthy fats and balances out the hit of sugar from the fruit)
  • 1/4 cup almonds

Puree banana, coconut milk and nuts in the food processor (or blender) until its a smooth creamy consistency. Stir peaches in. These leaves a nice chunky fruit texture. Pour into molds, let freeze and enjoy without any guilt!

There are so many combos to try. I usually like to add pureed spinach into it – like a frozen green smoothie! Call them Shrek popsicles and you are good to go 🙂
