It’s Easy Being GREEN

Happy Hump Day – this week is flying by!

 

 

Wednesday’s are always super busy for me for some reason.  As soon as I got up today it has been non stop – meetings, training, personal stuff (oh the joys of banking!). Typically I would have had my 2 daily coffees by now (that is my limit for the day) but I am trying to ween myself off the caffeine as well as up my greens intake. Since getting my Vitamix (the CADILLAC of blenders) last week, it is like a whole new world of nutrition and raw foods has been opened to me (who knew you could have a chunk free kale smoothie!).

My first challenge for myself since adopting my Vitey has been replacing my daily coffee’s with homemade green smoothies. 

 

I am a self proclaimed caffeine addict and I LOVE coffee so this is definately a sacrifice for me.  But with so many delicious recipes to try and create, it is has been a ton of fun and I think I am starting to get what works and what doesn’t – like arugula in a smoothie is just not for this chick!

 

 

Here is my latest smoothie concoction which I had this morningI like to call it my “It is Easy being Green!” Smoothie!

Laura’s “It is Easy being Green” Smoothie

 

 

1 cup of Kale

1 cup of spinach

1/2 of a frozen banana (make sure it is overripe or it may not be sweet enough!)

2 tablespoons of Pb2 Powdered Peanut Butter. I used chocolate peanut version – Check out our CHICK REVIEW on this fab product.

1 cup of water and ice

While it may not look pretty, this smoothie is delicious! You can not taste any of the greens – it actually takes like a banana- chocolate- peanut butter milkshake!

 

Plus, it is high in dairy free calcium, low in cals (about 150 calories), and PACKED with nutrition to start the day and get things “moving”..literally! Try it, I know you will love it!

 

 

I will keep you posted on the coffee withdrawal but when replacing it with something so yummy, it is not hard!
