CHICK FEED – 2 Ingrediant Ice Cream (dairy free, gluten free, paleo & vegan friendly)

Happy Wednesday! I am celebrating hump day with a little dessert recipe I LOVE..that only has 2 ingrediants!

Before I get into that, one of my chicks said to me the other day that she would love if I could teach her how to cook as I have so many exciting recipes.  I wanted to tell her I was a diva in the kitchen – organized while wearing a spotless apron – but that is WAY FAR from the truth! When it comes to cooking, here are a couple of thing you have to know about me:

  1. I like SIMPLE recipes with minimal ingrediants (typically under 5 my attention span can’t handle too much 🙂
  2. I like minimal cooking time (ie under 30 min) When I am hungry, this chick needs to be fed!
  3. I cook things that are mostly dairy free, gluten free and paleo because that is what works for MY body and makes me feel the best (and always eat REAL food made with love 🙂
  4. I love DESSERT! Sweet stuff is my achilles heal so to find desserts that are inline with point #3 can sometimes be a challenge

But not too big of a challenge!  This is one of my NEW favorite dessert recipes..it is beyond delish!

CHICK FEED:  2 INGREDIENT ICE CREAM RECIPE

Adapted from:  The Detoxinista

  • 2 frozen bananas
  • 2 Tablespoons organic cashew butter
Instructions
  1. Break the frozen bananas into chunks and toss them into a mini food processor, along with the cashew butter.
  2. Blend until the bananas break down into a soft-serve consistency, adding a little bit of water if needed. It should be creamy!
  3. Serve immediately for a soft-serve style dessert, or transfer to a sealed container and store in the freezer for a for a firmer, scoop-able ice cream

OMG it is so creamy, sweet, melt in your mouth delicious! Some other little chicks tips I have tried:

  • Add a pinch of sea salt.  It is a nice balance of sweet, creamy and salty
  • Swap out banana for mango. Mangos are super creamy and sweet too.
  • Play with your nut butters: try peanut, almond, even tahini…part of the fun is experimenting!
  • Mix 1 tbsp of coconut oil with raw cacao powder.  It makes chocolate sauce.  When you drizzle on your ice cream, it will harden just like Dairy Queen dipped cones!
