WELLNESS WEDNESDAY: The “Chick Approved” version of Spaghetti Bolognese sans Spaghetti (gluten free, dairy free, vegan & paleo friendly recipe)

Hope you are having a super fab day!  I am so sorry this post is a day late but let’s just pretend it’s still Wednesday…and I promise the food you are about to see is worth the wait 🙂

Spiralizers, nut milk bags, irish moss, glass straw cleaners...it was a nutrionista's version of Xmas!

So this past weekend, I checked out the Whole Life Expo in Toronto with some amazing chicks from my nutrition course. And while many chicks are lusting over diamonds and pearls, I have had a long standing love crush on a sweet appliance that I finally got to take home this weekend- the spiralizer!

For those who do not know what a spiralizer is  it is basically a slicer that turns your fruits and veggies into long noodles or ribbons.  And why do I absolutely LOVE that idea?  Because it gives you a super fast, grain & gluten free, fresh, super healthy alternative to pasta!

You can cut out the crappy carbs that spike your blood sugar, zap your energy and make you gain weight and still get your spaghetti fix especially as the weather gets cold and we can use that comfort food. Plus it makes your food look so pretty 🙂

CHICK FEED:  Super Sassy Spaghetti Bolognese sans Spaghetti

FOR THE “SPAGHETTI”:

1-3 Zuchinni (depending on how many you are cooking for)

DIRECTIONS:
Use your spiralizer to turn into noodles. If you do not have a spiralizer, don’t stress! You can also use a julienne peeler (looks like a reg veggie peeler but with teeth) or julienne strips on your mandolin slicer.

Tip: You can eat it raw but I like to steam my for a couple of minutes or add right to the sauce in the pot to heat the noodles slightly. It really feels like spaghetti to me then!

HOMEMADE TOMATO SAUCE
This recipe is super forgiving so you can play with it to suit your tastes. I adapted from one I found on the Lakewood Farmers Market blog.

Ingrediants:
1 cup sundried tomatoes (look for organic as many have sulphites in them!)
2  tomatoes – seeds removed
1 red pepper
1 tbsp fresh lemon juice
1-2 cloves garlic
1 small red onion
1/4 cup of olive oil
1 tbsp. chopped fresh oregano
1 tbsp. chopped basil
Sea salt and pepper to taste

DIRECTIONS
Simply throw all ingredients in a high powered blender and blend until smooth. You may need to add a little more olive. The key to the flavor in this sauce is the sundried tomatoes so add as much as you like! Serve hot or cold.

MAKE IT A COMPLETE MEAL!

Now to make this a complete meal we need to add a protein to get a sweet balance of protein, fibre and fats. I love a chunky sauce so I added organic ground chicken for my protein and then some additional chunks of carrots and celery. For my vegan chicks, you can sub the ground chicken for quinoa or chopped walnuts to get an additional protein source.

I am so in love with this dinner that I ate it every day this week and did an extra special celebratory version on the day we found out that we won the 2012 Gold Stevie Award for Women in Business – Company of the Year (go chicks!) where I swapped the zuchinni for sweet potato…so delicious!

Now I am off to find out what else I can spiralize – stay tuned!
