CHICK FEED: The Fierce Flourless Cookie Recipe (grain free, gluten free, paleo friendly)

6 days until the big man in the red suit…can you believe it?!

I finally just started to do a little healthy holiday baking to give away to some of my fave peeps. Today, I wanted to share with you one of the best flourless cookies (made from all whole foods and of course, with love!) to make for the holidays. They are chewy, rich, sweet but not too sweet and packed with healthy fats.

Hmmmm chocolate chips!

I made a batch of these last nigth and while I overcooked them slightly, they were still so delish that I have to get them out of my house or they will be finding a new home in my belly soon 🙂

The perfect bites

THE FIERCE FLOURLESS COOKIE RECIPE

This makes about 18 – 24 cookies depending on how large you want them.

Ingrediants

  • 1 Cup Sunflower Seed Butter (this is a great alternative to peanut butter especially for those with allergies or serving to kids)
  • 1 Egg
  • 1/3 cup of raw honey
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon  pure vanilla extract
  • 1/4 teaspoon salt
  • 1/4 cup of chopped dark chocolate (I used Enjoy Life Gluten Free Chocolate chips which you can get at the Bulk Barn for about $3.49/bag)

DIRECTIONS

  1. Preheat your oven to 350 degrees.  Line a baking sheet with parchment paper and set aside.
  2. Place all ingredients except chocolate chips into a bowl and mix until smooth.
  3. Once smooth, fold in chocolate chips or any extra goodies.
  4. Use a tablespoon (or small ice cream scoop) to drop cookie balls on parchment paper. I used a cool fork to squish mine:)
  5. Bake for approx 6-10 min.  These cook fast so check after 6 min. Once golden brown, remove from the oven and leave on the baking sheet for an additional 15 min to harden (they will be soft when still hot so make sure to let them sit – no touching!)
  6. After 15 min rest, transfer to a wire rack to cool completely (or eat one while still warm!)
  7. Serve at room temp or place in the freezer for later:)

A little well done but still delicious!

Here are a few chick tips to take these delicious to the next level:

  • Go nuts! Stir in walnuts, pecans or even flax seeds for a little more crunch.
  • Add dried fruits. Make a sweeter batter with chopped dried apricots, cranberries or even goji berries for more antioxidants.
  • Make into an ice cream sandwich! Just spoon in some of chick approved ice cream between 2 cookies and rolled the outside in toasted almonds…too.die.for!
  • Cookies & cream! Serve with our dairy free coconut “whipped cream”, chopped nuts and sprinkle cocoa

Or for Santa, you can leave out with a glass of non dairy milk… we guarantee he won’t even know they are good for him 🙂
