Hey Chicks,
wow, how the week went fast! I had an exhausting weekend at work, so eats weren’t great – a lot of picking at different foods.
Today I had another crack at making those flourless cakes (damn chocolate cravings!) They turned out way better the second time, I just cooked them a little less. Now all the chocolate is out of the house so it can’t call my name.
Tonight I cooked up a whole chicken to use during the week. It’s a great money saving tip – a whole chicken costs about 8 bucks and can make a bunch of lunches for me. I just rub it with coconut oil and bake it in the oven for about an hour and a half at 325 degrees. Then I just keep it in the fridge and slice it up as I need it. I also boiled about a dozen eggs to keep on hand – but realistically they only last a day or so since the girls will eat 3 each at a time!
anyway, I am off to bed. Next week will be a better one, I am sure of it.
