In the program, students learn how to create amazing, balanced recipes using real, whole foods. \u00a0When we saw Rowen&#8217;s recipe, we thought it was perfect to share since it&#8217;s coming up to that time of year when we are looking for delicious, healthy options that can be made ahead and eaten on the go. This recipe will be a hit with adults and kids alike.<\/p>\n<p>Not only does Rowen have a great recipe, but she also has an inspiring story of her own! We&#8217;ll let Rowen take it away:<\/p>\n<div id=\"m_1380699742488737423yui_3_16_0_ym19_1_1503506795247_4237\" dir=\"ltr\">I have struggled with my weight for most of my adult life.\u00a0Then over the last few\u00a0years have started to develop some food sensitivities that made eating at times painful and uncomfortable, until figuring out the culprits.\u00a0\u00a0 As my weight grew, I noticed more headaches, more pain in my body, and more tiredness.\u00a0\u00a0 Then a\u00a0couple of years ago I tore my ACL in my knee, and became even less active, and gained more weight.\u00a0\u00a0\u00a0I became very frustrated because every time I would start on a healthy eating journey,\u00a0 I would go all out and hard and then my stomach would get irritated and I would have to stop and then go back to the same bad habits.<\/div>\n<div dir=\"ltr\"><\/div>\n<div id=\"m_1380699742488737423yui_3_16_0_ym19_1_1503506795247_4238\" dir=\"ltr\">I am now\u00a0in my forties, and as I see my parents age, and have more and more health issues, partially due to bad health habits, I decided now is the time to get this done.\u00a0\u00a0In January of 2016\u00a0I started with a six week challenge at a local bootcamp 3 days a week at\u00a0<span class=\"aBn\" tabindex=\"0\" data-term=\"goog_532740389\"><span class=\"aQJ\">6am<\/span><\/span>,\u00a0which also had a nutrition component.\u00a0\u00a0 It was so hard at first, getting up\u00a0early\u00a0and doing something I have never done before, \u00a0but\u00a0over the 6 weeks, I started to enjoy the exercise, found my niche with the nutrition piece, and developed new habits that started to stick!\u00a0\u00a0\u00a0 My trainer was so awesome, as were the people in my class.\u00a0 I never expected that.<\/div>\n<div dir=\"ltr\"><\/div>\n<p><\/p>\n<div id=\"m_1380699742488737423yui_3_16_0_ym19_1_1503506795247_4282\" dir=\"ltr\">At the end of the 6 week challenge, I found out I had won the challenge!\u00a0 By that time I was loving it, and seeing changes weekly.<\/div>\n<div dir=\"ltr\"><\/div>\n<div id=\"m_1380699742488737423yui_3_16_0_ym19_1_1503506795247_4301\" dir=\"ltr\">I\u00a0 finally started taking advantage of my benefits at work and went to a Naturopath to help with my digestion, a Physiotherapist to help with my knees, and massage and chiro to round it all off.\u00a0\u00a0\u00a0By December I had hit my goal I lost 70 lbs!\u00a0\u00a0 I feel that being part of a community, have a trainer\/coach, taking a holistic approach\u00a0and taking my time to learn new habits bit by bit are what helped me be successful.<\/div>\n<div dir=\"ltr\"><\/div>\n<div id=\"m_1380699742488737423yui_3_16_0_ym19_1_1503506795247_4347\" dir=\"ltr\">Throughout my journey I had so many people say how I inspired them, and how they started making changes in their own lives based on my results.\u00a0 It made me start to think, perhaps I could help others in a more official concrete way, and I started researching how to do that.<\/div>\n<div dir=\"ltr\"><\/div>\n<div id=\"m_1380699742488737423yui_3_16_0_ym19_1_1503506795247_4346\" dir=\"ltr\">I found the <a href=\"http:\/\/www.fitchicksacademy.com\">FIT CHICKS Academy<\/a>, really liked the curriculum and got in touch.\u00a0\u00a0 Amanda spoke with me on the phone in great length and really took the time to help me decide if it was a good fit for me.\u00a0 We both decided it was, and I was on my way!It has been an amazing journey so far, and I have loved every minute of my classes and learning at the Academy. They make a great breakfast on the go, and you could even cut them in half for an excellent snack. These are vegan and also loaded with fibre! Enjoy!<\/p>\n<p><strong><img loading=\"lazy\" class=\"aligncenter size-full wp-image-9462\" src=\"http:\/\/www.fitchicks.ca\/blog\/wp-content\/uploads\/2017\/08\/energybar.jpg\" alt=\"\" width=\"623\" height=\"326\" srcset=\"https:\/\/www.fitchicks.ca\/blog\/wp-content\/uploads\/2017\/08\/energybar-150x78.jpg 150w, https:\/\/www.fitchicks.ca\/blog\/wp-content\/uploads\/2017\/08\/energybar-200x105.jpg 200w, https:\/\/www.fitchicks.ca\/blog\/wp-content\/uploads\/2017\/08\/energybar-300x157.jpg 300w, https:\/\/www.fitchicks.ca\/blog\/wp-content\/uploads\/2017\/08\/energybar-400x209.jpg 400w, https:\/\/www.fitchicks.ca\/blog\/wp-content\/uploads\/2017\/08\/energybar-600x314.jpg 600w, https:\/\/www.fitchicks.ca\/blog\/wp-content\/uploads\/2017\/08\/energybar.jpg 623w\" sizes=\"(max-width: 623px) 100vw, 623px\" \/>CHOCOLATE MINT POWER BARS<\/strong><\/p>\n<p>Makes 18 bars<\/p>\n<p><strong>Ingredients <\/strong><\/p>\n<ul>\n<li>454g can chickpeas drained<\/li>\n<li>1 \u00bd cup old fashioned oats<\/li>\n<li>1 cup pea protein powder<\/li>\n<li>\u00be chopped walnuts<\/li>\n<li>\u00be cup chocolate chunks or chips( I used dairy free, organic)<\/li>\n<li>\u00bd cup applesauce<\/li>\n<li>6 pitted dates<\/li>\n<li>\u00bc cup pure maple syrup<\/li>\n<li>\u00bc cup ground flax seed mixed with \u00bc cup water<\/li>\n<li>2 tbsp cocoa<\/li>\n<li>1.5 tsp peppermint extract ( use more if you want them extra minty!)<\/li>\n<li>1 tsp cinnamon<\/li>\n<li>\u00bc tsp Himalayan salt<\/li>\n<li>Extra water as needed<\/li>\n<\/ul>\n<p><strong>Directions<\/strong><\/p>\n<ol>\n<li>Preheat oven to 350 degrees F<\/li>\n<li>Line a 13in x 9 in pan with parchment paper or lightly grease with coconut oil ( I used<br \/>\nparchment paper)<\/li>\n<li>Add all the ingredients EXCEPT- walnuts and chocolate chips to a food processor or<br \/>\ngood quality blender. Blend until it is a cookie dough like consistency. Add a little water<br \/>\nif it becomes too dry.<\/li>\n<li>Transfer to a bowl and add in chocolate chips and walnuts. Fold in with a wooden spoon<br \/>\nuntil evenly mixed in.<\/li>\n<li>\u00a0Transfer to the prepared 13 x 9 in pan and flatten evenly and firmly across the whole<br \/>\npan.<\/li>\n<li>Bake for 15 to 18 minutes until slightly browned on top. Over cooking will create a dry<br \/>\nbar.<\/li>\n<li>When cooled, cut into 18 even pieces and transfer to the fridge or freezer. I prefer to<br \/>\nkeep them in the freezer and take out as needed.
