Not only am I the best version of myself, I am a source of positive vibes for those around me. I now have the insights on how to create a life I don&#8217;t need a vacation from and inspire others to do the same.\u00a0<\/em><\/p>\n<div><em>Since completing the FNE program, I have launched a social media marketing business for heart-centered entrepreneurs called <a href=\"http:\/\/www.honestlysocial.ca\">Honestly Social<\/a>, AND I am working towards launching a second business in September 2017, which will encompass life coaching, accountability coaching, wellness and nutrition programs and adventure retreats! When you complete the FNE program you feel like you&#8217;re part of the FIT CHICKS family, and that you have the unwavering support of Laura, Amanda and the rest of the graduates to take on your wildest dreams!&#8221;<\/em><\/div>\n<div><\/div>\n<div>Ok&#8230;enough from us!\u00a0 Let&#8217;s get to food and LOVE&#8230;.Liz, take it away!<\/div>\n<div><\/div>\n<div><strong>2nd Date &#8220;Cauliflower Bowl&#8221; Recipe by Liz Hammond<\/strong><\/div>\n<p>\u201cWhat IS this?!\u201d asked my date, as he expressed satisfaction and confusion with every bite.<\/p>\n<p>I grinned, and replied, \u201cYou have three guesses. Go!\u201d<\/p>\n<p>\u201cCouscous? Rice? Quinoa?\u201d he questioned.<\/p>\n<p>\u201cNope!\u201d I said confidently. Perhaps a little too confidently, as I could tell I\u2019d impressed him with my cooking skills.<\/p>\n<p>\u201cWell then WHAT is it?!\u201d he urged.<\/p>\n<p>\u201cCauliflower!\u201d I squealed with delight, and proceeded to tell him all the delicious, organic, ingredients in his bowl.<\/p>\n<p>Is your first \u201ccome over to my apartment, and I\u2019ll cook you dinner\u201d date just around the corner? Have you frantically scrolled through Pinterest in search of an impressive, \u201cI tried but not too hard\u201d date night recipe?<\/p>\n<p>This inexpensive, quick to make, complete in 3 recipe will no doubt have your date asking for seconds &#8230; #DamnThisGirlCanCook<\/p>\n<p><img loading=\"lazy\" class=\"aligncenter wp-image-8123\" src=\"http:\/\/www.fitchicks.ca\/wp-content\/uploads\/2016\/08\/blog1.png\" alt=\"blog1\" width=\"600\" height=\"298\" srcset=\"https:\/\/www.fitchicks.ca\/blog\/wp-content\/uploads\/2016\/08\/blog1-300x149.png 300w, https:\/\/www.fitchicks.ca\/blog\/wp-content\/uploads\/2016\/08\/blog1.png 742w\" sizes=\"(max-width: 600px) 100vw, 600px\" \/><\/p>\n<h2>2nd Date Cauliflower Bowl<\/h2>\n<p><strong>Preparation Time: 5 minutes Cooking Time: 15 minutes <\/strong><br \/>\nServings: 3, 2 cups per serving Diet: Gluten Free, Vegetarian Nutrition: 288 calories, 20g fat, 13g protein, 24g carbs<br \/>\nIngredients:<\/p>\n<p>1 head of organic cauliflower<br \/>\n2 cups of organic black kale, finely chopped<br \/>\n1 roma tomato, diced<br \/>\n1 medium avocado, chopped<br \/>\n2 tbsp of coconut oil<br \/>\n50g of Chevrai soft unripened goat cheese<br \/>\n2 lemon slices<br \/>\n1 tsp of cumin<br \/>\nSprinkle of chopped parsley to garnish<br \/>\nSupplies: 1 large saut\u00e9 pan, 1 medium saut\u00e9 pan, 2 medium mixing bowls, wooden spoon, measuring spoons and cups, knife, cutting board, 2 serving bowls, and wine.<\/p>\n<p><img loading=\"lazy\" class=\"aligncenter wp-image-8128\" src=\"http:\/\/www.fitchicks.ca\/wp-content\/uploads\/2016\/08\/blog2-2-1024x512.jpg\" alt=\"blog2\" width=\"600\" height=\"300\" srcset=\"https:\/\/www.fitchicks.ca\/blog\/wp-content\/uploads\/2016\/08\/blog2-2-300x150.jpg 300w, https:\/\/www.fitchicks.ca\/blog\/wp-content\/uploads\/2016\/08\/blog2-2.jpg 1024w\" sizes=\"(max-width: 600px) 100vw, 600px\" \/><\/p>\n<p>&nbsp;<\/p>\n<p><strong>Directions: <\/strong><\/p>\n<p>1. Pour yourself a glass of wine. Wash all veggies.<\/p>\n<p>2. Cut up head of cauliflower into quarters. Slice away tough middle. Cut into small florets. Place 1 cup of chopped cauliflower in blender or food processor. Blend until rice like consistency. Remove and place into bowl. Repeat, adding 1 cup of cauliflower at a time, until all is blended.<\/p>\n<p>3. Mix avocado, tomato and 1\/2 tsp of cumin into second bowl. Sip wine. Mix kale and 1\/2 tsp of cumin into cauliflower bowl.<\/p>\n<p>4. Melt 1 tablespoon of coconut oil in each saut\u00e9 pan over medium heat.<\/p>\n<p>5. Add the avocado and tomato mix to the medium pan and cook for about 5 minutes or until tomatoes are tender. Add the cauliflower and kale mix to the large pan. Cover and cook on low heat for about 5 &#8211; 8 minutes or until cauliflower is as tender and kale is soft.<\/p>\n<p>6. Add the avocado, tomato and goat cheese to the cauliflower and kale. Mix well. Sip wine, and cook for another 5 minutes over low heat.<\/p>\n<p>7. Transfer 2 cups of final dish into each serving bowl. Garnish dish with lemon wedge and parsley. Finish wine. Fix hair, and serve with a smile. 8. Add saut\u00e9ed organic chicken breast.<br \/>\nCan\u2019t have dairy? Sub the goats cheese for tofu to make it a vegan dish. Sub the parsley for cilantro and lemon for lime.<\/p>\n<p><strong>Conversation Starters: <\/strong><br \/>\nKale provides an excellent source of vitamins B6 and C, carotenes, and manganese. It is also a very good source of vitamins B1, B2, and E, fiber, iron, copper, and calcium. Limiting \u201cwhite stuff\u201d is one of the best ways to feel and look your best! White rice has had the fibre stripped from it and all that\u2019s left is little sugar bombs! With the exception of cauliflower, (and some dairy if you can tolerate it) white is not right!
