Yes, that\u2019s right I am back to be a student and the one thing I learned from the last time I went to school was that I do not want to gain the freshman 15!  After my years of researching \/trying  \u201ceverything under the sun to eat healthy on a busy schedule\u201d , <strong>I have learned that the one thing to keep you on track with any busy schedule is\u2026..can you guess?   MEAL PREP!<\/strong> Sorry chicks \u2013 no magic pills, special drinks or following a certain \u201cdiet\u201d, <strong>it is all about being prepared and stocked up with healthy, grab and go meals that will save you bucks, calories and make sure you know what the heck is going into your body!<\/strong> <strong> <\/strong><\/p>\n<div id=\"attachment_5578\" style=\"width: 310px\" class=\"wp-caption aligncenter\"><strong><a href=\"http:\/\/www.fitchicks.ca\/blog\/wp-content\/uploads\/2014\/08\/H-A-V-E-\u00a0Y-O-U-\u00a0B-E-E-N2.png\"><img aria-describedby=\"caption-attachment-5578\" loading=\"lazy\" class=\"size-medium wp-image-5578\" title=\"H A V E \u00a0Y O U \u00a0B E E N\" src=\"http:\/\/www.fitchicks.ca\/blog\/wp-content\/uploads\/2014\/08\/H-A-V-E-\u00a0Y-O-U-\u00a0B-E-E-N2-300x150.png\" alt=\"\" width=\"300\" height=\"150\" \/><\/a><\/strong><p id=\"caption-attachment-5578\" class=\"wp-caption-text\">Meal Prep Motivation<\/p><\/div>\n<p>So in honor of heading back to class, <strong>I am sharing with you my latest addiction:  Mini Turkey Meatloaf Muffins!<\/strong> These badboys are <strong>packed with protein, fibre and by making in muffin tins are already in the perfect portions so you can grab &amp; go.<\/strong> Make a big batch as they also freeze well for next week\u2019s lunches too.<\/p>\n<p><strong>CHICK FEED:  \u201cIn the Buff\u201d Basic Turkey Meatloaf Muffins<\/strong><\/p>\n<p>INGREDIENTS (Make 6 meatloaf muffins)<\/p>\n<div id=\"attachment_5590\" style=\"width: 310px\" class=\"wp-caption alignright\"><a href=\"http:\/\/www.fitchicks.ca\/blog\/wp-content\/uploads\/2014\/08\/photo54.jpg\"><img aria-describedby=\"caption-attachment-5590\" loading=\"lazy\" class=\"size-medium wp-image-5590\" title=\"photo5\" src=\"http:\/\/www.fitchicks.ca\/blog\/wp-content\/uploads\/2014\/08\/photo54-300x225.jpg\" alt=\"\" width=\"300\" height=\"225\" srcset=\"https:\/\/www.fitchicks.ca\/blog\/wp-content\/uploads\/2014\/08\/photo54-300x225.jpg 300w, https:\/\/www.fitchicks.ca\/blog\/wp-content\/uploads\/2014\/08\/photo54-1024x768.jpg 1024w, https:\/\/www.fitchicks.ca\/blog\/wp-content\/uploads\/2014\/08\/photo54.jpg 3264w\" sizes=\"(max-width: 300px) 100vw, 300px\" \/><\/a><p id=\"caption-attachment-5590\" class=\"wp-caption-text\">Mini Meatloaf Muffins<\/p><\/div>\n<p>\u2022\t454G extra lean ground turkey<br \/>\n\u2022\t1 cup zucchini, grated<br \/>\n\u2022\t1\/3 onion, grated<br \/>\n\u2022\t1-2 cloves garlic, grated<br \/>\n\u2022\t3 tbsp of oat flour or ground oats<br \/>\n\u2022\tSalt &amp; Pepper<br \/>\n\u2022\tTomato paste (for topping only)<\/p>\n<p>DIRECTIONS<\/p>\n<p>1.\tPreheat your oven to 350 degrees.<br \/>\n2.\tPlace turkey in a mixing bowl and grate in the zucchini, onions and garlic. (Note \u2013 I find grating keeps it very moist and makes sure each muffin has an even flavour.  If you prefer a chunkier meatloaf, just chop)<br \/>\n3.\tAdd oat flour, salt &amp; pepper and any additional spices you might like at this point.<br \/>\n4.\tRoll into 6 even muffins and place into a non stick muffin tray.  Top with a dollop of tomatoe sauce or paste.<br \/>\n5.\tCook for approx. 30 -35 minutes and let cool before eating.<\/p>\n<p><em>Nutrition info (Per mini meat muffin ): 128 calories, 15.5g protein, 5.9g carbs, 4.2g fat<\/em><\/p>\n<div id=\"attachment_5581\" style=\"width: 310px\" class=\"wp-caption aligncenter\"><a href=\"http:\/\/www.fitchicks.ca\/blog\/wp-content\/uploads\/2014\/08\/meat3.png\"><img aria-describedby=\"caption-attachment-5581\" loading=\"lazy\" class=\"size-medium wp-image-5581\" title=\"meat\" src=\"http:\/\/www.fitchicks.ca\/blog\/wp-content\/uploads\/2014\/08\/meat3-300x111.png\" alt=\"\" width=\"300\" height=\"111\" srcset=\"https:\/\/www.fitchicks.ca\/blog\/wp-content\/uploads\/2014\/08\/meat3-300x111.png 300w, https:\/\/www.fitchicks.ca\/blog\/wp-content\/uploads\/2014\/08\/meat3.png 454w\" sizes=\"(max-width: 300px) 100vw, 300px\" \/><\/a><p id=\"caption-attachment-5581\" class=\"wp-caption-text\">Mix &amp; Scoop!<\/p><\/div>\n<p><strong>CHICK TIPS<\/strong><\/p>\n<p><strong>Go with the grate!<\/strong> By grating the zucchini, onion and garlic, it evens out the flavor in each meatball and helps keep it moist.  Turkey can dry out when cooking so I find this helps to keep it delish and moist.<\/p>\n<p><strong>Prefer a chunkier meatloaf?<\/strong> Just chop your veggies instead \ud83d\ude42<\/p>\n<p><strong>Make it your own!<\/strong> This is a mini meatloaf \u201cin the buff\u201d aka it is a base recipe.  That means there is lots of room for YOU to add your creativity to make it a fave.  <strong>Add Italian seasoning, hot chilies or even Asian style with ginger and soy.  Don\u2019t like turkey?<\/strong> Try extra lean ground beef or lean ground pork.<\/p>\n<p><strong>Maximize your cooking time!<\/strong> This recipe makes 6 meatloaf muffins.
