{"id":5260,"date":"2013-10-08T10:48:40","date_gmt":"2013-10-08T18:48:40","guid":{"rendered":"http:\/\/www.fitchicks.ca\/blog\/?p=5260"},"modified":"2013-10-08T10:48:40","modified_gmt":"2013-10-08T18:48:40","slug":"chick-feed-cauliflower-roasted-parsnip-mash-recipe","status":"publish","type":"post","link":"http:\/\/www.fitchicks.ca\/blog\/2013\/10\/chick-feed-cauliflower-roasted-parsnip-mash-recipe\/","title":{"rendered":"CHICK FEED: Cauliflower &#038; Roasted Parsnip Mash Recipe"},"content":{"rendered":"<p>Hey Chicks,<\/p>\n<p>Thanksgiving is around the corner and we want to make sure you have some healthy but super delicious options for a &#8220;Chick Approved&#8221; holiday!<\/p>\n<p><strong>Mashed potatoes are so last season!<\/strong> And being high in simple carbs, they don&#8217;t do much of anything for your body but add an extra layer to your hips and put you into a sugar induced sleep coma.\u00a0 Try this tasty mash treat that still gives you the creamy comfort of mashed potatoes but with more nutrients, less calories and healthy fats!<\/p>\n<p><a href=\"http:\/\/www.fitchicks.ca\/blog\/wp-content\/uploads\/2013\/10\/cauliflower-mashed-potatoes-resize1_154940.jpg\"><img loading=\"lazy\" class=\"aligncenter size-full wp-image-5261\" title=\"cauliflower-mashed-potatoes-resize1_154940\" src=\"http:\/\/www.fitchicks.ca\/blog\/wp-content\/uploads\/2013\/10\/cauliflower-mashed-potatoes-resize1_154940.jpg\" alt=\"\" width=\"350\" height=\"223\" srcset=\"http:\/\/www.fitchicks.ca\/blog\/wp-content\/uploads\/2013\/10\/cauliflower-mashed-potatoes-resize1_154940-300x191.jpg 300w, http:\/\/www.fitchicks.ca\/blog\/wp-content\/uploads\/2013\/10\/cauliflower-mashed-potatoes-resize1_154940.jpg 350w\" sizes=\"(max-width: 350px) 100vw, 350px\" \/><\/a><\/p>\n<p>&nbsp;<\/p>\n<h3>Cauliflower and Roasted Parsnip Mash<\/h3>\n<p>This mash is creamy thanks to the coconut milk, and dreamy thanks to the parsnips.<\/p>\n<ul>\n<li> 4-6 skinny parsnips<\/li>\n<li> Medium sized head of cauliflower<\/li>\n<li>4 tablespoons of coconut milk<\/li>\n<li>1 tablespoon extra virgin olive oil or coconut oil<\/li>\n<\/ul>\n<p>Peel and cut parsnips into small strips. Toss in olive oil. Lay on a baking sheet and roast at 400\u00b0F for 20 minutes.<\/p>\n<p>Cut cauliflower into florets and steam until tender.<\/p>\n<p>Combine parsnips, cauliflower, and coconut milk in a food processor and blend until smooth. You can add more or less coconut milk until you achieve your desired consistency.<\/p>\n<p><strong>Don&#8217;t like coconut milk?<\/strong> Use almond milk!<\/p>\n<p><strong>Don&#8217;t like parsnips?<\/strong> Sub for turnip, butternut squash sweet potatoes or even 1\/2 cauliflower &amp; 1\/2 potato if you MUST have the taters&#8230;but make sure to keep the cauliflower!<\/p>\n<p>Try this delicious side dish this\u00a0Thanksgiving Day&#8230;your peeps will love it!<\/p>\n<p>Happy Thanksgiving!<\/p>\n<p>FIT CHICKS xo<\/p>\n<p><strong>PS.
