{"id":5130,"date":"2013-08-02T10:28:22","date_gmt":"2013-08-02T18:28:22","guid":{"rendered":"http:\/\/www.fitchicks.ca\/blog\/?p=5130"},"modified":"2013-08-02T10:28:22","modified_gmt":"2013-08-02T18:28:22","slug":"chick-feed-scrummy-yummy-apple-strawberry-crumble-gluten-free-dairy-free","status":"publish","type":"post","link":"http:\/\/www.fitchicks.ca\/blog\/2013\/08\/chick-feed-scrummy-yummy-apple-strawberry-crumble-gluten-free-dairy-free\/","title":{"rendered":"CHICK FEED:  Scrummy Yummy Apple Strawberry Crumble (gluten free, dairy free, no sugar added)"},"content":{"rendered":"<p>Hey Chicks,<\/p>\n<p><strong>Long weekend is almost here <\/strong>and while lots of\u00a0peeps are packing up for the cottage or to get out of dodge for the weekend, <a href=\"http:\/\/www.fitchicks.ca\">we are getting ready to rock our last session of summer bootcamps starting Aug 6th<\/a> (we have Monday off for the holiday:) and celebrate summer with<a href=\"http:\/\/www.fitchicks.ca\/retreats\"> our Sweats &amp; Shades Retreat on Aug 9 &#8211; 11 (you can still register!)<\/a><\/p>\n<div id=\"attachment_5137\" style=\"width: 625px\" class=\"wp-caption aligncenter\"><a href=\"http:\/\/www.fitchicks.ca\/blog\/wp-content\/uploads\/2013\/08\/IMG_3963.png\"><img aria-describedby=\"caption-attachment-5137\" loading=\"lazy\" class=\"size-full wp-image-5137\" title=\"IMG_3963\" src=\"http:\/\/www.fitchicks.ca\/blog\/wp-content\/uploads\/2013\/08\/IMG_3963.png\" alt=\"\" width=\"615\" height=\"609\" srcset=\"http:\/\/www.fitchicks.ca\/blog\/wp-content\/uploads\/2013\/08\/IMG_3963-150x150.png 150w, http:\/\/www.fitchicks.ca\/blog\/wp-content\/uploads\/2013\/08\/IMG_3963-300x297.png 300w, http:\/\/www.fitchicks.ca\/blog\/wp-content\/uploads\/2013\/08\/IMG_3963.png 615w\" sizes=\"(max-width: 615px) 100vw, 615px\" \/><\/a><p id=\"caption-attachment-5137\" class=\"wp-caption-text\">Scrummy Yummy Apple Strawberry Crumble topped with coconut whipped cream = heaven<\/p><\/div>\n<p>That said,<strong> I am kicking around The Coop this weekend and decided to invite some of my fave peeps over for a have a healthy balcony potluck <\/strong>(I don&#8217;t have a backyard&#8230;a little squishy but still works :).\u00a0 We are all bringing something and with gorgeous, sweet strawberries in season, I jumped at the chance to bring the dessert&#8230;.<strong>a scrummy, yummy Apple Strawberry Crumble that is gluten free, dairy free, no sugar added\u00a0&#8230;<\/strong> even my BF\u00a0 loved it.<\/p>\n<p><strong>It is beyond easy to make and is the perfect mixture of sweet, tart, comforting <\/strong>and not too heavy for a summer meal topped with <a title=\"WELLNESS WEDNESDAY: Coconut Whipped \u201cCream\u201d Recipe (dairy free, gluten free, sugar free, paleo &amp; vegan friendly)\" href=\"http:\/\/www.fitchicks.ca\/blog\/2012\/12\/wellness-wednesday-coconut-whipped-cream-recipe-dairy-free-gluten-free-sugar-free-paleo-vegan-friendly\/\">coconut whipped cream<\/a>.\u00a0 <strong>Plus, you can even eat the left overs for breakfast with greek yogurt<\/strong> to add some protein (believe me, I have!)<\/p>\n\n<p>&nbsp;<\/p>\n<h3>CHICK FEED: Scrummy Yummy Apple Strawberry Crumble<\/h3>\n<p><strong>Ingrediants<\/strong><\/p>\n<p><em><strong>Chicktastic Topping &#8220;Crumbles&#8221;<\/strong><\/em><\/p>\n<ul>\n<li>2\/3 cups of <a href=\"http:\/\/www.bobsredmill.com\/gluten-free-rolled-oats.html\">gluten free oats<\/a><\/li>\n<li>2\/3 cup of sliced almonds<\/li>\n<li>1\/2 cup of gluten free flour <em>(note -I used coconut flour but you can use any kind.\u00a0 Check the Bulk Barn as they have gluten free flours listed and you don&#8217;t need to buy a whole bag!)<\/em><\/li>\n<li>1\/3 cup of raw honey or maple syrup<em> (note &#8211; you can also omit the honey \/ maple syrup and use stevia in its place for a sugar free option.)<\/em><\/li>\n<li>1\/3 cup of coconut oil <em>(make sure it is in liquid form so may need to heat lightly if hard<\/em>)<\/li>\n<li>1\/2 each of cinnamon and nutmeg<\/li>\n<\/ul>\n<p><strong><em>FABULOUS FILLING<\/em><\/strong><\/p>\n<ul>\n<li>4 cups of apples <em>(mixture of\u00a0green, Fuji, gala peeled and cut into the same size chunks)<\/em><\/li>\n<li>3 cups of organic strawberries &#8211; sliced<\/li>\n<li>1\/2 cup of chopped dates <em>(note &#8211; you can omit the dates and use stevia, raw honey or maple syrup)<\/em><\/li>\n<\/ul>\n<p><strong>DIRECTIONS<\/strong><\/p>\n<ul>\n<li>Mix all topping ingredients in a bowl by hand until it forms little crumbles (you may need to add more coconut oil).\u00a0 Set bowl aside.<\/li>\n<li>Heat oven to 350 degrees<\/li>\n<li>Grease a 9 X 9 baking dish with coconut oil.\u00a0 Peel and chop all apples.\u00a0If doing in advance, squeeze lemon juice over to avoid browning. Add apples, sliced strawberries and chopped dates or sweetner to pan and toss with hands so fruit is mixed evenly<\/li>\n<li>Spread topping &#8220;crumbles&#8221; evening over fruit and make sure its fully covered<\/li>\n<li>Bake uncovered for approx. 35 -45 min or until bubbly.
