We just finished filming our 24 episodes of &quot;Shape Up with FIT CHICKS&quot; on Rogers TV<\/p><\/div>\n<p><\/strong><\/p>\n<p><strong> <\/strong><\/p>\n<p><strong> <\/strong><\/p>\n<p><strong><br \/>\n<\/strong><\/p>\n<p>It is one of those dishes that is <strong>super refreshing, healthy, easy to make but makes you look like a real food connoisseu<\/strong>r (I am all about looking fancy on a budget&#8230;clothing wise and food:)<\/p>\n<div id=\"attachment_4034\" style=\"width: 310px\" class=\"wp-caption aligncenter\"><a href=\"http:\/\/www.fitchicks.ca\/blog\/wp-content\/uploads\/2012\/07\/Watermelon.jpg\"><img aria-describedby=\"caption-attachment-4034\" loading=\"lazy\" class=\"size-medium wp-image-4034\" title=\"Watermelon\" src=\"http:\/\/www.fitchicks.ca\/blog\/wp-content\/uploads\/2012\/07\/Watermelon-300x200.jpg\" alt=\"watermelon and feta\" width=\"300\" height=\"200\" srcset=\"http:\/\/www.fitchicks.ca\/blog\/wp-content\/uploads\/2012\/07\/Watermelon-300x200.jpg 300w, http:\/\/www.fitchicks.ca\/blog\/wp-content\/uploads\/2012\/07\/Watermelon.jpg 640w\" sizes=\"(max-width: 300px) 100vw, 300px\" \/><\/a><p id=\"caption-attachment-4034\" class=\"wp-caption-text\">So pretty and even yummier!<\/p><\/div>\n<p>Here is my fave recipe for this super salad that I have to give full credit to the <a href=\"http:\/\/www.foodnetwork.com\/recipes\/paula-deen\/watermelon-salad-with-mint-leaves-recipe\/index.html\">lovely Paula Deen from the Food Network fo<\/a>r with a couple small changes to suit my tastes.\u00a0 I swap the red wine vinegar for aged balsamic and the sweet onion for red onion.  Alot of her dishes are not too healthy as she is a Southern Lady but this one is a fave and is great with fish:<\/p>\n<h3>CHICK FEED:  WATERMELON FETA MINT SALAD<\/h3>\n<p><strong>Ingredients<\/strong><\/p>\n<p>1 (5-pound) watermelon<br \/>\n1 Vidalia or other sweet onion (I like red onions and it looks pretty!)<br \/>\n1\/4 cup red wine vinegar  (I actually prefer an aged balsamic in this but red wine works too!)<br \/>\nSalt and pepper<br \/>\n1\/2 cup extra-virgin olive oil<br \/>\n2 tablespoons chopped fresh mint<br \/>\n4 ounces feta cheese, crumbled<br \/>\n6 whole mint sprigs<\/p>\n<p><strong>Directions<\/strong><\/p>\n<p>Cut the flesh from the melon and cut into bite size pieces, removing and discarding the seeds, and set aside. Peel and slice the onion into rings.<\/p>\n<p>In a small bowl, combine the vinegar, salt, pepper, and whisk until salt is dissolved. Slowly whisk in the olive oil, a few drops at a time. Add in the chopped mint, taste, and adjust seasonings.<\/p>\n<p>In a large bowl, combine the melon, onion, and feta. Pour the dressing over the melon mixture and toss gently until everything is coated and evenly mixed.
