{"id":3711,"date":"2012-02-29T13:25:56","date_gmt":"2012-02-29T21:25:56","guid":{"rendered":"http:\/\/www.fitchicks.ca\/blog\/?p=3711"},"modified":"2012-02-29T13:25:56","modified_gmt":"2012-02-29T21:25:56","slug":"wellness-wednesday-soup-is-on","status":"publish","type":"post","link":"http:\/\/www.fitchicks.ca\/blog\/2012\/02\/wellness-wednesday-soup-is-on\/","title":{"rendered":"WELLNESS WEDNESDAY &#8211; Soup is on!"},"content":{"rendered":"<p>Hey Chicks,<\/p>\n<p>First of all, I am so sorry for my lack of posting over the last 2 weeks!\u00a0 I was hit with a very yucky cold that pretty much had me out of commission (huge thanks to my sub Chick Sergeants who take care of <a href=\"http:\/\/www.fitchicks.ca\">my bootcamps<\/a> while I was out!)<\/p>\n<div id=\"attachment_3712\" style=\"width: 268px\" class=\"wp-caption aligncenter\"><a href=\"http:\/\/www.fitchicks.ca\/blog\/wp-content\/uploads\/2012\/02\/Parsnip_235146.jpg\"><img aria-describedby=\"caption-attachment-3712\" loading=\"lazy\" class=\"size-full wp-image-3712\" title=\"Parsnip_235146\" src=\"http:\/\/www.fitchicks.ca\/blog\/wp-content\/uploads\/2012\/02\/Parsnip_235146.jpg\" alt=\"Healthy Parsnip Soup with FIT CHICKS\" width=\"258\" height=\"195\" \/><\/a><p id=\"caption-attachment-3712\" class=\"wp-caption-text\">A match made in FIT CHICK heaven:  Parsnip &amp; Pear!<\/p><\/div>\n<p>So without an appetite but knowing I needed a lot of cold fighting nutrients,<strong> I rediscovered my love of homemade soup! <\/strong> If you know me, I tend to get on a veggie kick and get addicted to one veggie for awhile.\u00a0 So now <a title=\"WELLNESS WEDNESDAY- I have a love crush\" href=\"http:\/\/www.fitchicks.ca\/blog\/2012\/01\/wellness-wednesday-i-have-a-love-crush\/\">my obsession with fennel<\/a> is so last month and <strong>I have a new love crush&#8230;<a href=\"http:\/\/en.wikipedia.org\/wiki\/Parsnip\">PARSNIPS<\/a>!<\/strong><\/p>\n<p>I love how <strong>this root vegetable is a little sweet, totally filling and makes your soup thick and creamy without having to add any dairy. <\/strong> I was chatting with someone last week about one of <strong>my fave soup combinations and was inspired to make it this week &#8211; Parsnip &amp; Pear!<\/strong><\/p>\n<p>Here is one of my favorite recipes. It calls for yogurt but you can omit it and it still tastes great. Sub 0% greek yogurt for a higher protein soup but the same creamy taste &#8211; so delish!<\/p>\n<h2>CREAMY PARSNIP &amp; PEAR SOUP<\/h2>\n<p>15 ml (1 tbsp) olive oil<br \/>\n2 medium onions, minced<br \/>\n500 g (1 lb) parsnips, minced<br \/>\n1 L (4 cups) low sodium chicken broth<br \/>\n1 pear (Bartlett or Anjou), peeled, cored and cut into pieces<br \/>\n175 ml (3\/4 cup) plain yogurt<br \/>\n1 pinch nutmeg<br \/>\nSalt and pepper (to taste)<\/p>\n<h3>DIRECTIONS<\/h3>\n<p>In a heavy pan, heat the oil and saut\u00e9 the onions and the parsnips on medium heat for a few minutes, stirring until the vegetables are tender.<\/p>\n<p>Add the chicken broth and cook for 20 minutes on low heat. Add the pear pieces and cook for another 5 minutes.<\/p>\n<p>Mix the preparation in a food processor until smooth. Return to the pan and add the yogourt. Reheat the soup for 2 minutes.<\/p>\n<p>Salt and pepper to taste.
