{"id":3670,"date":"2012-02-08T14:11:20","date_gmt":"2012-02-08T22:11:20","guid":{"rendered":"http:\/\/www.fitchicks.ca\/blog\/?p=3670"},"modified":"2016-07-15T17:29:05","modified_gmt":"2016-07-15T17:29:05","slug":"wellness-wednesday-omelet-muffins-are-so-delicious","status":"publish","type":"post","link":"http:\/\/www.fitchicks.ca\/blog\/2012\/02\/wellness-wednesday-omelet-muffins-are-so-delicious\/","title":{"rendered":"Wellness Wednesday &#8211; Omelet Muffins are so delicious!"},"content":{"rendered":"<p>Hey Chicks,<\/p>\n<p>I have been running so much lately in the evenings these days as <a href=\"http:\/\/www.fitchicks.ca\">I am teaching bootcamp 4 nights<\/a> and have been <strong>trying to shake up my &#8220;grab and go&#8221; snacks that aren&#8217;t too heavy <\/strong>(the last thing you want is something to &#8220;revisit&#8221; you during class aka throw up!) but are satifying and high in protein to keep me full. That is when I discovered the <a href=\"http:\/\/www.marksdailyapple.com\/omelet-muffins\/#axzz1lpQfNM72\">&#8220;Omelet Muffin<\/a>&#8221; on a <a href=\"http:\/\/www.marksdailyapple.com\/omelet-muffins\/#axzz1lpQfNM72\">blog that love called Mark&#8217;s Daily Apple<\/a>. These puppies are portable, freeze well and are awesome reheated so you can make a batch and take on the road with you for breakkie, dinner or even just as a snack.<\/p>\n<div id=\"attachment_3671\" style=\"width: 310px\" class=\"wp-caption aligncenter\"><a href=\"http:\/\/www.fitchicks.ca\/blog\/wp-content\/uploads\/2012\/02\/Omlet-muffin.jpg\"><img aria-describedby=\"caption-attachment-3671\" loading=\"lazy\" class=\"wp-image-3671 size-medium\" src=\"http:\/\/www.fitchicks.ca\/wp-content\/uploads\/2012\/02\/Omlet-muffin-300x225.jpg\" alt=\"low carb omelet muffins\" width=\"300\" height=\"225\" srcset=\"http:\/\/www.fitchicks.ca\/blog\/wp-content\/uploads\/2012\/02\/Omlet-muffin-300x225.jpg 300w, http:\/\/www.fitchicks.ca\/blog\/wp-content\/uploads\/2012\/02\/Omlet-muffin-1024x768.jpg 1024w, http:\/\/www.fitchicks.ca\/blog\/wp-content\/uploads\/2012\/02\/Omlet-muffin.jpg 2048w\" sizes=\"(max-width: 300px) 100vw, 300px\" \/><\/a><p id=\"caption-attachment-3671\" class=\"wp-caption-text\">Omelets for the chick on the go!<\/p><\/div>\n<p>Here are a few changes I made to the recipe from Mark&#8217;s site:<\/p>\n<h3>CHICK FEED:\u00a0 An Omelet Muffin..chick style!<\/h3>\n<p>\u20226 eggs and 2 whites<br \/>\n\u20221\/4 cup proscuitto, cut<br \/>\n\u20221\/2 cup of spinach<br \/>\n\u20221\/4 cup of chopped red onion and red peppers (reduce onion to 1\/8 cup if too strong!)<br \/>\n\u2022\u20221\/8 cup <a href=\"http:\/\/www.marksdailyapple.com\/alternative-healthy-condiment-recipes\/#axzz1lpQfNM72\">mayonnaise<\/a> (this is a great recipe too from Mark&#8217;s site for homemade mayo..so much better than processed stuff!)<br \/>\n\u20221\/8 cup water<br \/>\n\u2022a pinch of salt and pepper (the proscuiotto is salty so I usually don&#8217;t use any salt)<\/p>\n<p>(TIP: For a more &#8220;upscale&#8221; omelet muffin, I also put goat cheese and subbed the red peppers for roasted red peppers.\u00a0 They are soooo yummy!)<\/p>\n<div>\n<p><strong>Directions: <\/strong><\/p>\n<p>Preheat oven to 350 degrees.\u00a0I lined my muffin tins with the paper\u00a0muffin cups as per his recommendation as they were easier to transport!<\/p>\n<p>In a bowl, beat the eggs.
