{"id":2748,"date":"2011-06-27T09:32:54","date_gmt":"2011-06-27T17:32:54","guid":{"rendered":"http:\/\/www.fitchicks.ca\/blog\/?p=2748"},"modified":"2011-06-27T09:32:54","modified_gmt":"2011-06-27T17:32:54","slug":"mama-chick-monday-healthy-picnic-ideas","status":"publish","type":"post","link":"http:\/\/www.fitchicks.ca\/blog\/2011\/06\/mama-chick-monday-healthy-picnic-ideas\/","title":{"rendered":"Mama Chick Monday &#8211; Healthy Picnic Ideas"},"content":{"rendered":"<p>Hey Chicks!<\/p>\n<p>I just love summer &#8211; and what could be more fun than a picnic at the beach?<\/p>\n<p>Except the day we decided on our picnic happened to be the first day of crap weather we have had in a while. Nonetheless, I promised the girls and they were so excited. So off we went with <a href=\"http:\/\/www.fitchicks.ca\/blog\/2010\/09\/my-mama-the-ultimate-fit-chick\/\">Granny<\/a> for a fun and wet afternoon.<\/p>\n<p>Picnics often drum up memories of fried chicken, creamy potato and macaroni salads, sandwiches, baked goods and lots of other unhealthy delights. But not ours!<\/p>\n<p><strong>Here&#8217;s what was in my picnic basket:<\/strong><\/p>\n<ul>\n<li>Eggs &#8211; hard boiled eggs are a fabulous hand held snack!<\/li>\n<li>Veggies \u00a0&#8211; zucchini, onion, peppers and mushrooms which we skewered and cooked on the outdoor bar-b-q, plus some raw carrot and celery sticks to munch on.<\/li>\n<li>Chicken &#8211; precook chicken skewers at home. They are delicious and easy to eat on a picnic!<\/li>\n<li>Salads &#8211; (I forgot to pack this, but I meant to!) Quinoa salads, greek salads, homemade healthy slaws &#8211; all are great in your cooler!<\/li>\n<li>Fresh fruit &#8211; yummy summery fruits like watermelon, mangoes and berries<\/li>\n<li>Yogurt &#8211; plain greek yogurt (which we topped the fresh fruit with!)<\/li>\n<li>Water &#8211; plain water is the best bevvie for a picnic (this was one for the kiddies, so alcohol wasn&#8217;t even considered&#8230;lol)<\/li>\n<\/ul>\n\n<p>Now I admit &#8211; it wasn&#8217;t a TON of food. <strong>But just because you are at a picnic or a bar-b-q doesn&#8217;t mean you have to stuff yourself!<\/strong> I felt nicely satisfied and not overstuffed or bloated. There was also no bread &#8211; but as I have said before, I like to <a href=\"http:\/\/www.fitchicks.ca\/blog\/2011\/05\/top-5-gluten-free-low-carb-substitutes-for-bread\/\">limit our intake of processed carbs<\/a> and get carbs from fresh fruit, veggies and sometimes whole grains.<\/p>\n<h2>What&#8217;s your fave healthy food to pack in your picnic basket?<\/h2>\n<p>Have a fab week!<\/p>\n<p>Sarah<\/p>\n","protected":false},"excerpt":{"rendered":"<p>Hey Chicks!
