She talked about cauliflower rice, which is fabulous. So we thought we&#8217;d give you a fab &#8220;one pot&#8221; recipe using cauliflower rice.<\/p>\n<p>Here&#8217;s how to make the basic &#8220;rice&#8221; &#8211; take out your food processor  and put the grating blade in it. If you don&#8217;t have one, you can grate it  with a cheese grater but it is a little finicky. Take a bunch of cauli  florets. Process them and they will get a &#8220;rice like&#8221; consistency.<\/p>\n<div id=\"attachment_2525\" style=\"width: 210px\" class=\"wp-caption alignnone\"><a href=\"http:\/\/www.fitchicks.ca\/blog\/wp-content\/uploads\/2011\/05\/caulirice1.jpg\"><img aria-describedby=\"caption-attachment-2525\" loading=\"lazy\" class=\"size-full wp-image-2525\" title=\"caulirice\" src=\"http:\/\/www.fitchicks.ca\/blog\/wp-content\/uploads\/2011\/05\/caulirice1.jpg\" alt=\"low carb cauliflower rice\" width=\"200\" height=\"134\" \/><\/a><p id=\"caption-attachment-2525\" class=\"wp-caption-text\">these little pieces of cauli become your rice!<\/p><\/div>\n<p>Now that you have your &#8220;rice&#8221; you can do a lot with it. It only needs  to be sauteed in a pan with a little oil to warm it up, then you can  use it as a base for curries and sauces, or add whatever mixins you like  for a side dish. Here&#8217;s an easy one to get you started:<\/p>\n<h2>Curried Cauliflower Rice<\/h2>\n<h2>\n<p><div id=\"attachment_2522\" style=\"width: 210px\" class=\"wp-caption alignnone\"><a href=\"http:\/\/www.fitchicks.ca\/blog\/wp-content\/uploads\/2011\/05\/rice.jpg\"><img aria-describedby=\"caption-attachment-2522\" loading=\"lazy\" class=\"size-full wp-image-2522\" title=\"rice\" src=\"http:\/\/www.fitchicks.ca\/blog\/wp-content\/uploads\/2011\/05\/rice.jpg\" alt=\"low carb cauliflower rice recipe\" width=\"200\" height=\"134\" \/><\/a><p id=\"caption-attachment-2522\" class=\"wp-caption-text\">makes a huge, delish portion!<\/p><\/div><\/h2>\n<ul>\n<li>First you make your rice and set aside. In a pan, saute one  pound of chicken breast in a little coconut oil. Add in your fave  veggies (I used peppers, zucchini, onions and mushrooms). Saute until  chicken is cooked.<\/li>\n<li>Then add half a can of coconut milk and a few tbsps of curry  paste and a bit of s&amp;p to taste and a 1\/2 cup of pineapple chunks if  desired.<\/li>\n<li>Put the &#8220;rice&#8221; in at the end and just heat it through, otherwise it will become mushy. Make sure it&#8217;s hot, and serve!<\/li>\n<\/ul>\n<p>Do you have any recipes you&#8217;d like healthier versions of?
