These brekkie pancakes are loaded with nutrition and low in sugar &#8211; perfect to make for a Sunday brunch!<\/p>\n<p><span style=\"text-decoration: underline;\"><strong>\u00a0<\/strong><\/span><\/p>\n<div id=\"attachment_1757\" style=\"width: 310px\" class=\"wp-caption alignleft\"><a href=\"http:\/\/www.fitchicks.ca\/blog\/wp-content\/uploads\/2011\/01\/sweet-potato-pancakes.jpg\"><img aria-describedby=\"caption-attachment-1757\" loading=\"lazy\" class=\"size-medium wp-image-1757 \" title=\"sweet potato pancakes\" src=\"http:\/\/www.fitchicks.ca\/blog\/wp-content\/uploads\/2011\/01\/sweet-potato-pancakes-300x224.jpg\" alt=\"\" width=\"300\" height=\"224\" \/><\/a><p id=\"caption-attachment-1757\" class=\"wp-caption-text\">Courtesy of www.teafactory.wordpress.com<\/p><\/div>\n<p style=\"text-align: center;\"><span style=\"text-decoration: underline;\"><strong>Sis&#8217; Sweet Potato Pancakes<\/strong><\/span><br \/>\nIngredients:<br \/>\n1 (1 pound) sweet potato<br \/>\n2 cups rolled oats<br \/>\n2 tablespoons olive oil<br \/>\n4 eggs + 1 egg white<br \/>\n2 teaspoons vanilla extract<br \/>\n2 teaspoons ground cinnamon<br \/>\n1 cup plain yogurt<\/p>\n<p style=\"text-align: left;\">\u00a0<\/p>\n<p style=\"text-align: left;\">\u00a0<\/p>\n<p style=\"text-align: left;\">\u00a0<\/p>\n<p style=\"text-align: left;\">Directions:<br \/>\n1. Pierce the sweet potato a few times with a fork. Wrap in a paper towel and<br \/>\ncook in the microwave for 5 minutes at full power, or until tender. Cool<br \/>\nslightly, and remove the skin with a small knife.<\/p>\n<p>2. Meanwhile, process the oats in a blender or food processor until powdery.<br \/>\nTransfer the oats to a large bowl. Break the sweet potato into chunks, and<br \/>\nplace in the food processor. Blend until smooth. Transfer to the bowl with the<br \/>\noats, and stir in the olive oil, eggs, egg white, vanilla, cinnamon<br \/>\nand yogurt. Adjust the thickness to your liking by adding more yogurt if<br \/>\nnecessary.<\/p>\n<p>3. Heat a lightly greased skillet over medium heat. Pour 1\/4 cupfuls of batter<br \/>\nonto the skillet when hot, and cook until bubbles appear on the surface. Flip,<br \/>\nand cook on the other side until browned.
