It&#8217;s becoming colder and more blustery, so guess what time it is &#8211; SOUP time!<\/p>\n<p style=\"text-align: left;\">Today&#8217;s soup recipe is brought to us by the FAB<a href=\"http:\/\/cookbakenibble.com\"> Kristen from Cook, Bake and Nibble<\/a>. Not only has she been kicking butt at our <a href=\"http:\/\/www.fitchicks.ca\/boot_camp_fitness_locations.php\">High Park location<\/a>, she&#8217;s also an incredible chef. Be sure to check her blog out &#8211; and the recipe below!<\/p>\n<p style=\"text-align: center;\"><span style=\"text-decoration: underline;\"><strong>Buttercup Squash and Lentil Stew <\/strong><\/span><\/p>\n<p style=\"text-align: left;\"><strong> <\/strong><em> Ingredients: <\/em><\/p>\n<p style=\"text-align: left;\">1 1\/4 cup lentils, dried<\/p>\n<p style=\"text-align: left;\">2-3 tbsp EVOO<\/p>\n<p style=\"text-align: left;\">1 cup onion, small dice<\/p>\n<p style=\"text-align: left;\">1 clove of garlic, minced<\/p>\n<p style=\"text-align: left;\">3 cups buttercup squash, peeled and diced <em> <\/em><\/p>\n<p style=\"text-align: left;\">1 28-oz can crushed tomatoes<\/p>\n<p style=\"text-align: left;\">2 cups stock; vegetable or chicken<em> <\/em><\/p>\n<p style=\"text-align: left;\">1\/4 tsp each basil, paprika,<\/p>\n<p style=\"text-align: left;\">TT sea salt and freshly cracked black pepper<\/p>\n<p style=\"text-align: left;\">4 tbsp fresh sage, roughly chopped or chiffonade<\/p>\n<p style=\"text-align: left;\">\n<p style=\"text-align: left;\"><em>To prepare: <\/em><\/p>\n<p style=\"text-align: left;\">1. Place lentils and three cups of water in  a medium saucepan over high heat. Bring to a boil and turn down to a  simmer, simmer for 20 minutes until cooked.<\/p>\n<p style=\"text-align: left;\">2. Meanwhile, chop onion. Heat EVOO on  medium heat and add onion. Sautee until translucent, being careful not  to brown. Add garlic and sautee 10 seconds, again not browning.<\/p>\n<p style=\"text-align: left;\">3. As onion is cooking, peel and dice squash. Add to a stockpot with onion\/garlic mixture, crushed tomatoes and stock.<\/p>\n<p style=\"text-align: left;\">4. Add spices and bring to a boil. Reduce to a simmer, add lentils and cook 30-40 minutes to let the flavours meld.<\/p>\n<p style=\"text-align: left;\">Serve with a pinch of fresh sage on top.
